This picture shows how we always ate lunch and dinner in Hvar. Always outside. Always by the sea. Always feasting on seafood with a fantastic bottle of local wine. All Hvar cafes and restaurants we tried were excellent.
To this day, we still talk about the fried calamari we had on Hvar as the best calamari we have ever had in our lives. Also outstanding was the whole fish cooked with olive oil, garlic and parsley. Mmmmmmm!
Cooking the fish whole is the important part, with the eyeball staring up at you. This is not the American way - for some odd reason we think our fish must always be boned, skinned and with heads cut off. However, fish caught in the Adriatic cannot be eaten the American way or it will not taste as good as it should.
When I returned to America, I wanted to make the fish Adriatic style, with bones still in, skin on, head on and eyeball staring up at me. At the US fish market (many fish markets, in fact), I tried to buy fish this way, but the markets thought I was crazy. Who eats fish with the head still on and eyeball staring up at you?
I will have to return to Croatia for this -- no luck in the US. Leave a Comment

Good food (or "spiza" as the locals say) is an integral part of the Hvar tradition. Healthy, light, mostly boiled food (chiefly fish), seasoned with home-made olive oil and a pinch of herbs which grow wild everywhere, helped down with good wine - this is why the people of Hvar are so healthy and long-lived!

Hvar restaurants offer a wide choice of dishes, from the typical tourist menus to a variety of local specialities. As you are here, we urge you to taste some of the local specialities:
- goat's cheese in olive oil
- very healthy and tasty wild cabbage
- wild cabbage salad
- "Gregada" - a typical Hvar dish of several kinds of fish, boiled with potatoes
- "Pečica na tečicu" - fresh goat's cheese fried with sugar
- "Rožada" - a juicy egg and milk pudding

I found the food excellent. I tried some of the local dishes and was never dissapointed.
