To this day, we still talk about the fried calamari we had on Hvar as the best calamari we have ever had in our lives. Also outstanding was the whole fish cooked with olive oil, garlic and parsley. Mmmmmmm! Cooking the fish whole is the important part, with the eyeball staring up at you. This is not the American way - for some odd reason we think our fish must always be boned, skinned and with heads cut off. However, fish caught in the Adriatic cannot be eaten the American way or it will not taste as good as it should. When I returned to America, I wanted to make the fish Adriatic style, with bones still in, skin on, head on and eyeball staring up at me. At the US fish market (many fish markets, in fact), I tried to buy fish this way, but the markets thought I was crazy. Who eats fish with the head still on and eyeball staring up at you? Good food (or "spiza" as the locals say) is an integral part of the Hvar tradition. I found the food excellent. I tried some of the local dishes and was never dissapointed.

Taste some of the local specialities: goat cheese in olive oil; very healthy and tasty wild cabbage salad; "Gregada" - a typical Hvar dish of several kinds of fish, boiled with potatoes; "Pecica na tecicu" - fresh goat cheese fried with sugar; "Rozada" - pudding somewhat similar to Creme Caramel in southern France; home-made "prosek" desert wine; octopus salad; fish soup with rice; baked brass with boiled Swiss chard and potatoes, or mashed potatoes with onion; "Paradizet" - desert made of eggs and milk.
